Vegan Roasted Sweet Corn Salad with Pepitas | @naturallyella

If your summer season is anything like mine, it includes what feels like an endless amount of get-togethers and picnics. Weekends are for getting out and exploring. This roasted corn salad has made it’s way to quite a few events this summer in a few different variations. It’s easily assembled, tossed in a container, and dressed right before serving. Plus, my favorite part: the lightly fried pepitas. They add the perfect crunch in place of where I might traditionally use croutons. Don’t want to turn on your oven? Grill the corn on the cob with the spices and use a grill pan for the tomatoes and onion. Read more and see the recipe.

Vegetarian Sweet Corn Recipes for Summer

I am about to jump on a plane bound for Illinois. It will be the first time Mack will meet most of the family and all I’m hoping is that the plane ride goes okay. I’m actually excited to be catching the end of summer in Illinois- it’s been something I miss every year (minus the humidity- I’ve never missed that). I always feel that there’s a certain quality to small-town, slowed down summers.

In honor of heading back to the midwest, I thought I’d shared with you some of my favorite sweet corn recipes from the archives of the site. I won’t ramble on again about my love of sweet corn but I will say that if you can pick some up before the season ends, do it. Every season I gravitate towards one item. Some summers it’s been zucchini while others it’s tomatoes. This year, I’ve been a sweet corn fiend. Sweet corn has been my go-to salad topping, filler for grain bowls and now this sweet corn pasta.

I love using soft cheeses as a cheater way to make a sauce. The goat cheese in this sweet corn pasta dish creates a silky sauce that isn’t overpowering. However, and this is especially true if you stick to the whole wheat pasta, plan on no leftovers. If the pasta is allowed to sit, all the sauce soaks in and you’re left with some dry pasta!

Roasted Red Pepper Relish Black Bean Tacos (+ Homemade Corn Tortilla Video)

I’ve made it no secret that I love Mexican food. So much so, in fact, that the night I went into labor with Mack, I was making enchiladas (I probably should have been at the hospital but since I wasn’t sure, I made dinner instead.) I love the flavor combinations and it’s a cuisine that so easily lends itself to the vegetarian side of things.

In terms of tacos, I could come up with a new variation for each day (365 days of tacos- sounds like a cookbook idea right there, ha!) I have my favorites (like these sweet potato/guac ones– years later and I still love them) but that doesn’t stop me from experimenting. I think it’s easy to overlook roasted red peppers as a main ingredient but they can be so handy (and really delicious- especially when you roast/grill them yourself!) This red pepper relish is great for these tacos but could easily be used in a myriad of ways. I’ve swapped out the cotija cheese for feta and used as a salad topping, stuffed this mixture in a quesadilla, and mixed with grains for lunch.

On top of the red pepper relish, I’ve decided to take the plunge with an idea that’s been in my head for some time. I know there are things on this site that seem easy to me but can easily seem daunting when just starting out and so, I’ve decided to start a video series that shows how-to’s on somewhat tricky items. I already have a video on on how to make corn tortillas with a press but I wanted to create a short, 60 second video on how to ‘roll’ out tortillas with a bowl and hand roller (do you have one of these in your kitchen- I use it more than my rolling pin!) So, without further ado, more corn tortillas:

Over the past three years, my patio garden has grown and evolved. I’ve learned so much and every year, I get a bit better at not killing things off. One of the toughest things is battling the hot, valley summer while trying to balance water conservation. This year I installed a drip system that works on a timer, but I’m still carefully monitoring everything (but the initial water bill was nearly half of what it was last year!) It’s both exciting and a bit nerve-wracking because it seems very easy to kill a plant off that was doing well only a week ago.

That being said, I tend to have excellent luck with peppers. I have three plants, a sweet pepper plant, a shisito plant and a poblano plant (primarily to make stuffed peppers). If I had it my way, 90% of stuffed pepper recipes would be made using poblano (this also might be because I’m kind of in love with Chile Relleno). I love the unique flavor and the fact that you’re getting a chili pepper without the intensive heat of some.

These stuffed peppers use one of my favorite stuffing grains: sorghum. Sorghum has such a nice, nutty texture and holds its own with the sweet corn. Of course, if you don’t want to wait for it to cook (it does take a bit longer) or can’t find it, quinoa is usually my second choice for a grain!
