Turmeric improves digestion:  Curcumin, the active ingredient in turmeric, works by stimulating the liver and gall bladder to do the essential work of bile production.

Studies have found curcumin reduced symptoms of bloating and gas in people suffering from indigestion. As a digestive aid, turmeric is one of the best.

Hemp helps to fight inflammation: Hemp hearts contain an especially beneficial type of omega-6 fat called GLA that works in the body as an anti-inflammatory massager.

GLA can decrease inflammation, helping people suffering from asthma, arthritis and muscle pain. GLA also supports healthy hair, nail and skin health.

Blend these ingredients, on high in blender, until smooth to make one serving…

My Natural Skincare Routine

Do you have a natural skincare routine that works for you? Ever since I can remember I’ve had issues with my skin.

For many people, their lifestyle and choices do show in their skin, and some others are blessed with better genetics. Eventually though, I believe how you treat your body will manifest through your skin.

My problem happens to be breakouts, dullness and as I get older, drying and sagging.  I also notice a major difference if I don’t sleep well, aren’t getting good water intake, am overly stressed and aren’t eating well.

I wanted to share with you everything I’ve done to experiment with what did and what works for me.

The good news: I do often get compliments that I look close to 10 years younger then my age, and I think it’s because I try to take very good care of myself- in what I consume, am conscious of toxins around me, and what I put on my skin.  I hope my journey helps you.

Here’s my natural skincare routine + the other things that I do for skin

1. I’M CAREFUL ABOUT WHAT I EAT & DO PERIODIC CLEANSES.  Initially when I was getting into “healthy”
things many years ago I started juicing and I went vegan, to cleanse.  I also went all organic. I’ve tried a lot of things diet wise.
The biggest thing
that helped me was eliminating dairy, going organic and eating clean.  I have very little dairy these days- and when
I do I break out.  I’ve been eating
“clean” for a while now and it really does make a difference.  Your body doesn’t have to sort getting rid of
all the processed food. I also take whole food supplements by standard process to make sure I’m getting what I need.

2. I DRINK A LOT OF WATER.  I try to drink half my weight in ounces each
day. Your body needs this to function properly and also detox.  When I wake up in the morning I have a glass
with fresh squeezed lemon, a splash of apple cider vinegar and a few drops of
stevia.  This has really helped to clear
my complexion.

3. I JUICE.  I juice green and also with carrots frequently. My favorite for
improving my skin is the “perfect skin punch juice” below.  Juicing helps me get a major amount of
nutrition in a small glass.  The vitamin
A, C and other nutrients in this juice have helped tremendously.

4. I GET GOOD SLEEP.  I try to get 7-9 hours of sleep a night in a cool, dark room.  If I get less I can tell immediately.  My skin is plumper and healthier when I get good sleep. I also use a silk pillowcase.

5. I EXERCISE REGULARLY.  Each week I do cardio and some strength training.  Exercise has many benefits, but since we’re on the topic of skin, it helps my body to release toxins in sweat that might otherwise come out via skin issues. I have to wash my face immediately after working out or I break out.  If you notice you break out after a workout, try to wash your face at the gym or studio so the sweat doesn’t sit on your skin long. Tip: Never wear make up to work out!  It gets trapped in your pores and will create pimples.  It took me a long time to realize that.

6. I USE ESSENTIAL OILS.  Essential oils have helped me to sleep better, calm my stress and feel balanced. When I have less stress, I break out less.  I use and recommend Doterra blends.  I’m currently in love with the balance and breathe blends, frankincense (I mix it in my face cream) and lavender roll-on.

7. I USE SUNSHINE BOTANICALS SKINCARE PRODUCTS.  I’ve used the Pumpkin Power Face Peel in my natural skincare routine for years, but recently connected with Emily Fritchey, the CEO and Esthetician behind Sunshine Botanicals.  She shared with me her product line and it’s really taken me to the next level of caring for my skin.  They are all natural and use herbal extracts- they are powerful and amazing.

Here’s my before and after pic.  While it’s a little hard to see the blotches- I had this discoloration and uneven texture all over my face, as well as under skin type cysts.  It’s dramatically different now because of these products that took my skin to a new level.

Here are the products I use and the order I use them in.  Emily put this product line up together for me.  She is available for consults to help you too, or you can try what I’ve used in the order I use them each morning and evening.

Step 1. ARTIC MINT TEXTURE REFINING CLEANSER This amazing cleanser is heavenly.  It has mint and really washes away face oil/makeup but still leaves your skin soft.

Step 2. HYDRATING RECOVERY MIST  This mist is like a toner.  It is anti-fungal, anti-redness and calms the skin.

Step 3. RAPID REPAIR FLUID This fluid is an intensive repair serum that provides oil free hydration.  It has truly made my skin happy.

Step 4. BRIGHTENING COLLAGEN ACTIVATOR LOTION This light lotion diminishes discoloration and replenishes moisture while building collagen.

Step 5. A few times a week, I use the PUMPKIN POWER PEEL to remove brown spots and any uneven texture/coloration.  If you don’t want to get microdermabrasion or harsh chemical peals, try this.  It really works and is what first got me curious about the rest of Sunshine Botanicals line.

Step 6. Sometimes after this routine I put on the TOTAL ECLIPSE BB CREAM to may face and neck area.  It has a slight tint and is a natural skin cream for everyday use.  It’s great.

You can get any of these items at the Sunshine Botanicals Shop online.

So that’s what I do.  It seems like a lot, but most of those items are part of a healthy lifestyle anyway.  It’s really turned my skin around and if you’re having skin issues, I hope this information helps you.  Comment below on what’s worked for you and how you’d like to improve your skin.

15 Healthy Green Juice Recipes (and How to Make Your Own)

10

Gree Juice Recipes

Drinking a cup of green juice before any meal first thing in the morning is a great way to start your day.

Doing this fills your body with nutrients, enzymes, vitamins and minerals that gives you a natural energy boost minus the side effects.

You can say that drinking a cup of green juice a day will keep the doctor away.

Why add green leafy vegetables?

Green juice isn’t only green in appearance but it contains vegetables that have loads of vitamins, minerals, enzymes, chlorophyll and all the other good stuff that you want in your body. Dr. Mercola calls this a “living broth” that is filled with micro nutrients.

The key here is adding a different type of green vegetable in your juices every day. You do this so that your body will absorb as much nutrients as possible without overdosing it with any of the toxins (yes certain vegetables have toxins).

I cover this extensively in the juicing mistakes article.

Take note that these vegetables should take up at least a third of the recipe. The other parts should include a watery ingredient like cucumber or zucchini and a sweetener like apple, lemon, orange or carrot.

Check out this little chart I’ve prepared on how to make green juice.

How to Make Green Juice

You’ll also notice that I use cucumber and lemon in a lot of the recipes that’s because cucumber works great to add to the content to the juice and its flavor is neutral so it won’t affect the flavor in anyway plus it is a diuretic which helps flush away toxins from the body.

Lemon adds a little sourness to the juice and if you mix it with apple, it adds a nice contrast to the tarty sweetness of the apple.

It does not have a lot of sugar content so no need to worry about your sugar level spiking up.

The recipes

1. Sweet and Sour

  • 2 large celery ribs
  • 1 romaine lettuce head
  • 1 medium sized cucumber
  • 1 Fuji apple
  • Half a lemon

This recipe is sweet because it has an apple in it and sour because of the lemon. The romaine lettuce and cucumber pretty much have a neutral flavor. Celery adds a bit of bitterness to this drink.

The best time to drink this?

The best time would be after a long and stressful day or early in the morning.

Celery is rich in minerals like magnesium that help in relieving stress which make this a great drink after long day in the office.

Also since this is a diuretic, it helps flushing out toxins from the body. If you’re looking to start your day right, a cup of this juice before breakfast would do wonders in terms of helping your body getting rid of toxins.

Yield: 525 ml

2. Blood sugar busting diuretic

Blood sugar busting diuretic

  • 2 medium to large bitter melons
  • 1 romaine lettuce head
  • 1 Fuji apple
  • Half a lemon
  • 1 medium cucumber

I wouldn’t recommend this drink for people who don’t have any problems with elevated blood sugar levels (type-2 diabetics or pre-diabetics) because this really tastes bad. Even with the apple and lemon, you’ll still get a strong bitter melon taste.

Best time to drink this?

Best would be first thing in the morning before breakfast. Bitter melon (or gourd) has been used for years by people as a natural alternative to lower down blood sugar. It is potent and doctors have warned against taking this when taking diabetic medication because it could lead to a condition called hypoglycemia.

Yield: 600ml

3. The Bitter Anti Diabetic

  • 2 large bitter melons
  • A bunch of parsley
  • 1 medium sized zucchini
  • 1 red delicious apple
  • Half a lemon

This is an alternative to the other bitter melon recipe I shared above. Taste will be roughly the same but I just want to show you the possibilities of juice in terms of adding ingredients to fit your nutritional needs. Again only drink this if are at risk of having diabetes or have type-2 diabetes.

Best time to drink this?

Best time again would be in the morning before you have breakfast. In addition to bitter gourd, parsley also is known to help with lowering down blood sugar levels as it contains the chemical Coumadin that has been proven to lower blood sugar levels.

Yield: 700ml

4. Sweet Diuretic

  • A bunch of celery (I included the leaves)
  • 1 medium sized cucumber
  • 1 green pepper
  • 1 red delicious apple
  • 1 orange (peeled)
  • Half a lemon (optional)

Not a lot of people add green pepper into their juices but you should because these little shinny vegetable is rich in antioxidants like flavonoids, carotenoids and Hydroxycinnamic acids. It is also rich source of vitamin C, B6, A and folate. Don’t worry about the taste because this vegetable isn’t spicy at all. It has a slightly bitter flavor but that’s it.

Best time to drink this?

This would make for a great pre-breakfast or an in-between-meal drink to dial down the hunger pangs. Make sure to drink lots of water throughout the day.

Yield: 1.2 liters

5. Popeye’s Secret Sauce

Popeye’s Secret Sauce

  • A large handful of spinach
  • 2 medium sweet potatoes
  • 1 small green apple

If you grew up in the 80’s like I did, you’ll probably remember Popeye – his favorite found was spinach and with good reason. Spinach is a rich source of iron which affects the way our body uses energy. A lack of it can lead to feelings of sluggishness.

Best time to drink this?

An appropriate time would be in the morning before breakfast. The shot of iron will help you in terms of energy for the day. It is also a rich source of calcium which make this a great replacement for milk (if you are lactose intolerant).

Yield: 500 ml

6. The Green Delight

  • A large handful of spinach
  • A small handful of parsley
  • 4 medium carrots (peeled)
  • 1 Fuji apple
  • 1 clove of garlic
  • 1 small chunk of ginger (peeled)

The garlic and ginger spices this drink up and adds that contrast to this otherwise sweet drink. If you can’t stand the flavor of bitter melon, try this recipe to lower down your blood sugar naturally but you’ll have to remove (or lessen) the carrots because it also is a source of sugar.

Best time to drink this?

The best time would be the morning because the small chunk of ginger adds that spiciness that will help wake you up.

Yield: 850ml

7. Brown Celery Juice

  • A bunch of celery (I used a whole batch and yes I included the leaves)
  • 1 medium sized carrot (peeled)
  • 1 whole broccoli
  • 1 Fuji apple
  • Half a lemon (optional)

This is another drink that can replace milk in the morning because Broccoli is a rich source of vitamin K which is an ingredient that improves the body’s ability to absorb calcium. It also a good source of calcium on its own – around 43 milligrams per cup.

Best time to drink this?

Best time would be in the morning before breakfast or a snack time juice that replaces coffee.

Yield: 800ml

8. Green Strawberry Juice

  • 18 strawberries
  • 10 celery ribs
  • 1 Fuji apple
  • 1 medium cucumber

The first time I drank this, I said wow, it tastes like strawberry juice and the great thing about this is it doesn’t have any artificial flavoring. Since strawberries don’t juice well in a slow juicer, you may want to consider blending it instead of running it through a slow juicer (just in case you own one). You will still get the same strawberry flavor plus all the other benefits because the fiber is intact.

Best time to drink this?

This would make for a great afternoon pre-snack drink served chilled. It tastes so good that your kids will love it.

Yield: 800ml

9. Wonderful Broccoli

Wonderful Broccoli

  • large Fuji apple
  • 1 whole broccoli (including the stem)
  • 1 medium cucumber
  • Half a lemon
  • A small bunch of peppermint (just to add a little minty flavor to the juice)

I added mint to this recipe to add a little bit of minty flavor to contrast the sweet and tart flavor but more than that         mint is loaded with antioxidants that help fight allergies, colds and indigestion.

The best time to drink this?

This antioxidant loaded drink would be best consumed in the morning before eating any meals because it allows the body to absorb all the vitamins, minerals and antioxidants.

Yield: 575ml

10. The Heart Juice

  • 2 red lettuce heads
  • 2 medium sized pears or apple (depending on your preference)
  • Half a lemon
  • 1 medium cucumber

I call this the heart juice because of the high vitamin C content found in lettuce as well as lemon. The high vitamin C and beta-carotene content in lemon work well together to prevent the oxidation of cholesterol and causing high cholesterol.

Pears don’t add too much sweetness to this drink so it will have a strong flavor, an alternative would be using apples instead of pear if you can’t take the strong flavor.

The best time to drink this?

This heart drink would be best served in the morning or in the evening before dinner.

Yield: 1 liter

11. The Sleep Juice

  • 4 celery stalks
  • 3 to 4 romaine lettuce heads
  • Half a lemon
  • 1 Fuji apple

Romaine lettuce is a staple of most salads and one of the most nutritious in the lettuce family. Aside from being rich in calcium, vitamin K, iron and vitamin C, it also helps with insomnia because it has lactucarium – this is the white fluid that comes out when you break the lettuce.

The best time to drink this?

In the evening as a pre-dinner drink to help you sleep better.

Yield: 800ml

12. Pine-stard Delight

Pine-stard delight

  • 1 small pineapple
  • 3 to 4 mustard leaves
  • 5 small carrots (peeled)

This dark leafy green is rich in phyto-nutrients, vitamins and minerals. Regular consumption of mustard greens helps control cholesterol and will improve bone health because it is rich in vitamin K. It is tough to juice mustard greens because of the flavor – it has a certain type of spice that not all people may like.

Combining this with the wrong ingredient may produce disastrous results (e.g. orange).

The best time to drink this?

The best time would be in the morning before breakfast.

Yield: 700 to 800ml

13. Chlorophyll Rich Beet Juice

  • Handful of parsley (.94 kg to be exact)
  • Handful of wheatgrass
  • Half a lemon
  • 1 Fuji apple
  • 1 beet

This juice features wheatgrass and beet, two of the most nutrient rich vegetables. Wheatgrass in particular is considered a superfood by a lot of nutritionists and doctors. It is rich in chlorophyll, vitamins A, B-complex, C, E, basically every vitamin and mineral known to mankind that helps in healing and slows down the aging process.

The best time to drink this?

Drink this first thing in the morning before breakfast to get the maximum benefit.

Yield: 400ml

14. Chard Green Juice

  • 4 to 5 chard leaves
  • 2 cucumbers
  • Half a lemon
  • 1 to 2 Fuji apples

Chard is another nutrition powerhouse from the cruciferous family and like Kale is a rich source of vitamin K, A and C. This is great for our bone health and helps with our immunity because of the antioxidant content.

It has a slightly bitter flavor so if you’re not used to the flavor, start off by using 2 or 3 leaves to get used to the flavor.

The best time to drink this?

Best time would be in the morning before breakfast.

Yield: 850ml

15. Popeye’s strawberry juice + smoothie combo

  • 14 to 20 strawberries
  • A bunch of spinach (a handful or two)
  • A handful of parsley
  • 1 Orange or Apple

If you’re using a slow or masticating juicer, you’ll be better off blending strawberries because it does not juice well in a slow juicer. Using orange and apple will produce different results. If you use orange, the drink will be sour while apple gives it a sweeter, strawberry-juice like flavor.

The best time to drink this?

A great snack time drink for kids and adults.

Yield: 750ml

These are just 15 recipes, if you look closely at the “How to Make Green Juice” chart, the possibilities are endless. You can even add stuff like chia seeds or flax seeds for some added protein in your green juice. Do you like to work out? Try adding protein powder to a combination of beet and cucumber.

For brave souls, try adding some jalapeno or a tiny pinch of cayenne powder to bring up the heat.

If you have your own green juice recipe you’d like to share, I’d love to hear from you. Share them in the comments section below.

Buy Juicer Online (Best Place To Buy & Top Juicers Review)

Are you looking for a Juicer online?

Don’t know where to buy?

I know the feeling.

Juicing offers a number of benefits.

It provides you with antioxidants, vitamins and minerals and can ensure that you get the recommended amount of fruits and vegetables.

In this article, I will show you the best juicers available to purchase online and where to buy them cheap.

Check this out:

My Top 3 Best Juicers Online Review

[go_pricing id=”best-juicers”]

The Difference Between Centrifugal Juicers and Masticating Juicers

The two most common types of juicers are masticating juicers and centrifugal juicers.

So let’s get down to them.

The Centrifugal Juicer

A centrifugal juicer directs food away from the center of the machine.

Let me explain:

The juicer produces a high-speed spinning action that pulverizes the fruits and vegetables into a delicious juice.

Centrifugal juicers work great on soft and hard foods, however…

…they are less effective on leafy greens.

These are the most common types of juicers.

They are often advertised on television and sold in department stores. Check this out:

The centrifugal juicer acts similar to a blender. It pulverizes the fruits and vegetables into juice rather than just grinding it down.

It also has a much stronger motor and sharper blades than a blender. This is a great juicer for those who are new to juicing or who want to experiment with juicing.

Generally, this type of juicer is less expensive than a masticating juicer. Most are affordable; however, there are some models that can be quite pricey.

If you are planning on purchasing an expensive centrifugal juicer, opt for a masticating juicer instead.

Take a look…

Masticating Juicers

The definition of masticating is grinding, chewing or kneading a substance.

For example:

when you chew your food, you are essentially masticating the food.

A masticating juicer pulverizes and chews the fruits and vegetables on a low speed.

This type of juicer does not create a spinning action.

Masticating juicers use a squeezing action to pull the juice out fruits and vegetables.

The result?

This method does not create friction like other juicers because it works very slowly.

Additionally, because the juicer does not build up heat, many believe that it keeps the enzymes, vitamins and minerals intact.

Another name for this type of juicer is a cold press juicer.

Unfortunately, a masticating juicer is more expensive and some models cost well over $500.

How Does It Works?

In a masticating juicer, the foods are fed into a tube on the top of the juicer.

The food is then crushed and squeezed to remove the juice from the fruits and vegetables.

And the best part?

This type of juicer extracts more nutrients and the juice lasts longer as the juicer does not cause oxidation during the juicing process.

However…

…in order to work properly, the fruits and vegetables used in a masticating juicer must be cut done.

Furthermore, it takes longer to get a glass of juice than a centrifugal juicer.

If you lead a busy lifestyle and want a machine that cleans up easily, opt for the masticating juicer.

Additionally, these juicers are often quieter; however, the noise level can vary from brand to brand.

To ensure that you get one that cleans up easily and runs quietly research the brand before purchasing.

Juicers Offer Versatility and Flexibility

If you will be using your juicer to create baby food, sorbet and nut butter, shop around.

Many juicers come with special attachments so you can make a variety of foods, including those listed above.

Juicers offer a wonderful way to experience your foods in a variety of interesting ways.

Still not convinced?

It allows you to make a glass of healthy and tasty fruit and vegetable juice, create your own baby food, prepare flavorful sorbets and make homemade peanut butter and other types of nut butter.

Choosing the Right Juicer Based on Your Juicing Preferences

Typically, centrifugal juicers are recommended for those who do not plan on juicing wheatgrass and leafy greens.

They are also recommended for beginners and those who are on a tight budget. This type of juicer is perfect for fruit and vegetable juices.

On the face of it…

…masticating juicers are best for those who will be juicing leafy greens, herbs and wheatgrass, along with fruits and vegetables.

They are also recommended for those who are concerned about nutrient loss during juicing. Experienced juicers often prefer this type of juicer.

Lifestyles Can Affect the Type of Juicer You Should Buy

If you have children or light sleepers in your household, you need a juicer that is quiet.

The best choice for this type of juicer is the masticating juicer.

It will allow you to run your juicer day or night without disturbing anyone.

On the other hand…

…if you are always on the go, you need a juicer that will perform fast.

In addition, you need a juicer that allows you to put the parts into the dishwasher.

This type of juicer is a centrifugal juicer.

When choosing a juicer, you should consider your lifestyle and what is most important to you.

Size Matters

Your juicer will more than likely sit on your kitchen counter, so you need to ensure that it will fit there without taking up a lot of room.

Tip: To help ensure a proper fit, measure the distance between the bottom of your upper cabinets to ensure it can comfortably fit on your counter top.

If you do not do this, you may end up needing to return your juicer because it is too tall.

Juicing for Health

Juicing is more than creating a delicious glass of juice, it is adopting a new way of life to help improve your health.

Whether you choose a masticating juicer or a centrifugal juicer, you are sure to develop delicious drinks that are both healthy and tasty.

But consider this:

If you are on a limited budget, purchase an inexpensive juicer and begin reaping the health benefits that juicing provides.

This will allow you to take the first step in providing your body with the nutrients and enzymes your body needs.

If you have a larger budget, opt for a masticating juicer as it will provide you with greater nutrition.

The truth is:

Investing in a juicer is an investment into your’s and your family’s health.

Juicing allows you to get the most nutrients out of your food while enjoying a delicious beverage.

Are you ready to buy your first juicer online? You can start by clicking the button bellow:

Where To Buy Masticating Juicers?

Do you want to buy a masticating juicer?

Wondering what is the best place to buy?

If you are looking to invest in a juicer for juicing fruits, vegetables and greens, you will want to consider opting for this type of juicer.

Why do I say this?

This kind of juicer is superior for juicing greens because it utilizes a low speed which allows for the vegetables and greens to be juiced without being heated up which can cause a breakdown in nutrients.

Thus, when you use a masticating juicer, you will get the full allotted amount of nutrients rather than killing some off during the juicing process.

Once you have decided to invest in a masticating juicer, you will want to be sure that you do the research to find the top options available on the marketplace.

The market is full of viable options. With that being said, there are a few options available that prove to be superior than the rest.

In this article, we will be going over the top 5 masticating juicers to consider and where to buy them cheap.

Top 5 Masticating Juicers:

1. Omega J8006 Nutrition Center Juicer – Best Seller!

This is the number one best seller on Amazon for a reason as it offers a superior cost to value ratio.

Not only is this product a top seller, but it also has one of the best review scores on the entire Amazon marketplace as far as juicers are concerned ranking in at 4.5 out of 5 with over 2.880 individual reviews.

The reason why this juicer reigns supreme over a lot of the others on the marketplace is because it has a lot of excellent features that make it one of the top considerations on the market.

Let me explain…

It comes with a powerful yet subtle motor that offers superior functionality, easy to use juicing, no foaming, no clogging, and most importantly – no heat build up.

Because of this, you are able to juice all kinds of things without having to worry about burning off nutrients due to the heat and speed of the motor.

Because the motor clocks in at around 80 RPM’s, you do not have to worry about excessive heat build up which can ruin your juices.

Also, this particular juicer has the ability to offer high juice yields and it also features an auto pulp ejection system function which can allow continuous juicing.

But here’s the interesting thing:

One of the biggest benefits of this juicer that a lot of customers rave about is the juicer’s quiet functionality.

While a lot of juicers on the market offer good juicing capabilities, they end up being extremely loud and disruptive.

Because this juicer is able to offer the same functionality with minimal disruptions from noise, it is a very good juicer for those looking for more discrete juicing capabilities.

Warranty:

This juicer comes with a market leading 15 year manufacturers warranty.

Because of this, you can expect the juicer to not only last a long time, but also be supported for an incredible length of time as well.

2. Omega J8004 Nutrition Center Commercial Masticating Juicer

The next best option on the marketplace and the #2 best seller on Amazon would have to be the older model in Omega’s line.

The J8004 is an excellent option to consider because it comes with a lot of the same features and benefits of it’s newer sibling.

This particular juice is equipped with an 80 RPM motor just like it’s sibling which means it will effectively juice anything you want to without heating it up.

Also, it has the same easy to assemble functionality which makes it one of the easiest juicers on the market to clean. Because of this, this juicer is incredibly easy to use, clean, and storage.

Warranty:  This is an area where the Bella 13694 concedes a lot of position within the marketplace but at the same time the length is reasonable for the overall price of the unit in question. You will get a solid 2 year limited warranty with this unit.

One Pot Rice and Curried Butternut Squash

One Pot Rice and Butternut Squash | @naturallyella

This one pot rice dish is a staple for fall cooking in my home. Sauté onions and garlic, add in the other ingredients, cover, and let sit for 45 minutes. After that, all that’s left is to eat! The original version of this dish is based on this paella recipe but I’ve morphed it into a stove-top casserole dish as an easy adaptation. Rice and tomatoes cooked together can leave you with al dente rice but the secret is to make sure the rice is well coated with oil before adding the tomatoes. As a side note, our toddler also loves this one pot rice dish (as long as I use a mild curry powder)! Read more and see the recipe.

Purple Kale, Aubergine & Blackberry Salad

Purple_kale_salad_1

At first, it was a coincidence. When we looked at the vegetables we had brought home from the market this weekend, many of them just happened to have purple, violet and dark lavender tones. We talked about how that huge bunch of purple kale could make a beautiful salad base together with the rainbow chard, mint flowers and purple sugar snaps. It was at that point my obsessive side took over. “Let’s ONLY DO purple ingredients!” I shouted into Luise’s ear. She turned her head towards me with that hesitant look she always has when I get one of my “brilliant” ideas: “Ok, slow down now, let’s talk about the flavours first”. Of course I didn’t hear her as I was already writing a list with all the purplish ingredients I could think of: “aubergine, purple cauliflower, plums, figs, olives, blackberries, grapes, beetroot, red onion, …”.

Some recipes are born out of genius flavour combinations or new preparation methods, this one simply started out as a colour. Luise did however quickly gain back control and started shifting focus to the flavour and combination of vegetables as well.

In the end, I think we managed to combine both flavour, colour and texture in a great way. We roasted aubergine and purple spring onion in warm spices until soft and sweet. Massaged the kale with a flavourful dill, mint, lemon and honey dressing to round off its flavour and make it less sturdy. Cooked black lentils were added as a filler, along with rich and creamy avocado (even though it’s more black than purple – and green inside!). Hazelnuts are not purple at all but they added a nice crunch to the texture. Juicy blackberries made a perfect topping.

The result was beautiful, a true harvest salad. Maybe not as purple as I originally imagined it (basically because most vegetables loose their colour when they are cut/baked/cooked), but still with lovely deep hues and so many interesting flavours – a mix of herby, sweet and tangy.

When the salad was assembled it still felt like we missed a creamy element, so we tried the honey roasted feta that we had seen on New York Times Cooking last week. It was perfect. Burnt and caramelised on the outside and almost melted on the inside. It completely ruined the dark purple theme but flavour- and texture wise, it was worth the sacrifice. You’ll notice that I smudged it in mashed blackberries as a poor attempt to camouflage it.

We should perhaps add that this wasn’t our kids favourite dish. They picked out the blackberries, avocado and feta cheese from the salad, leaving the raw kale to us. I guess purple isn’t their colour…

Purple Kale & Blackberry Salad with Roasted Honey Feta

Vegans can just skip the feta cheese or replace it with hummus. And replace honey with maple syrup.

Baked vegetables
1 aubergine / eggplant

4 spring onions or 2 red onions
2-4 tbsp extra virgin olive oil
1/2 tsp ground cinnamon
¼ tsp ground cumin
1 pinch ground cayenne
1/2 tsp sea salt
1 handful hazelnuts

Cooked lentils
½ cup uncooked lentils (we used black lentils)

1 ½ cup water
1 pinch sea salt

Dressing
1/3 cup extra virgin olive oil
1/2 lemon, juice
2 tsp honey or more to taste
sea salt & pepper
1 large handful mixed fresh dill, parsley and mint

Other salad ingredients
4 stalks curly kale, green or purple
4 stalks rainbow chard or spinach
2 avocadoes
1 small handful snap peas
1 punnet fresh blackberries, halved

Roasted feta with honey (from NYT)
1 block feta cheese, patted dry
2 tbsp olive oil
1 tbsp honey

Start by preparing the baked vegetables. Preheat the oven to 400°F / 200°C. Wash and cut the aubergine into large cubes and trim and slice the onions, then place in a mixing bowl. Stir together oil and spices in a small bowl, pour the oil mixture over the aubergine and onions and toss to combine. Transfer to a baking tray covered with baking paper. Bake in the oven for about 20 minutes or until very soft and golden, check every now and then to prevent from burning, the baking time depends on the size of the vegetables. Add the hazelnuts halfway through.

Meanwhile, cook the lentils in a saucepan with the water for 15 minutes or until tender and can be mashed easily between two fingers. Add sea salt towards the end of the cooking time. Drain any excess water and leave to cool.

Prepare the dressing by mixing oil, lemon juice, honey, salt and pepper in a small bowl. Chop the herbs finely and add to the oil mixture. Taste and adjust to your liking.

Remove the stems from the kale and coarsely chop the leaves. Finely slice the chard. Place all in a large mixing bowl, add 2 tbsp of the dressing and massage for a couple of minutes until soft. Transfer to a large serving bowl. Mix the lentils with the remaining dressing and pour them over the kale and chard mixture. Cut the avocado into cubes, slice the snap peas and roughly chop the hazelnuts. Add to the salad bowl together with the roasted  aubergine, onions and hazelnuts. Toss slightly to combine and then scatter blackberries on top. If you like to serve the salad with the baked feta cheese, follow the instructions below.

Keep the oven at 400°F / 200°C. Place the feta cheese in a small ovenproof dish covered with baking paper and cover with oil. Bake in the oven for about 8 minutes, until soft but not melted. Melt the honey. Remove the cheese from the oven and turn the heat to broiler. With a baking brush, paint the cheese with the melted honey. Place back in the oven and broil until the top starts to brown. Use a spatula to immediately and carefully transfer the cheese to the salad, or serve it on the side.
